  • 1 cup chicken broth
  • 1 cup frozen broccoli florets, thawed
  • 1/2 cup chopped onion
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup crushed butter crackers (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked rice, shredded chicken, cream of chicken soup, cream of mushroom soup, chicken broth, thawed broccoli, chopped onion, parsley, garlic powder, and pepper. Mix until all ingredients are evenly coated.
  3. Stir in 1 1/2 cups of the shredded cheddar cheese into the mixture.
  4. Spread the entire mixture evenly into the prepared baking dish.
  5. Top the casserole evenly with the remaining 1/2 cup of shredded cheddar cheese. If using, sprinkle the crushed butter crackers over the cheese layer.
