  • 1 cup celery, finely chopped
  • 1/2 cup slivered almonds, toasted
  • 1/2 cup sweet pickle relish
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup chopped green onion
  • 1 can (8 ounces) water chestnuts, drained and chopped
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed potato chips or cornflakes for topping
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
  2. In a large bowl, combine the shredded chicken, celery, toasted almonds, pickle relish, mayonnaise, sour cream, cheddar cheese, green onion, water chestnuts, Dijon mustard, salt, and pepper. Mix gently until all ingredients are well combined and creamy.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. In a small bowl, toss the crushed potato chips or cornflakes with the melted butter. Sprinkle this crunchy mixture evenly over the top of the chicken mixture.
  5. Bake for 20 to 25 minutes, or until the casserole is heated through and the topping is golden brown and crisp.

  • For an easy make ahead chicken potluck dish, prepare the casserole through step 3, cover it, and refrigerate for up to 24 hours. Add the topping before baking and increase the baking time by 5 to 10 minutes.
