Ingredients
Scale
4 (6 ounce) salmon fillets, skin on or off
1 pound asparagus, trimmed
4 tablespoons unsalted butter, melted
3 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Lemon slices, for garnish
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Place the trimmed asparagus on one side of the prepared baking sheet. Drizzle with 1 teaspoon of the melted butter, a pinch of salt, and pepper. Toss to coat.
Place the salmon fillets on the other side of the baking sheet, leaving space between the fish and the asparagus.
In a small bowl, whisk together the remaining 3 tablespoons of melted butter, minced garlic, lemon juice, lemon zest, salt, pepper, and paprika to create the garlic butter sauce.
Spoon the lemon garlic butter sauce evenly over the top of each salmon fillet.
Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time depends on the thickness of your fillets.
Garnish with fresh lemon slices before serving. Serve immediately with the roasted asparagus.
Notes
For an extra savory flavor, try adding 1/2 teaspoon of dried Italian seasoning to the butter sauce.
If you prefer broccoli over asparagus, use about 3 cups of broccoli florets and toss them with the same seasoning mix.
This recipe is fantastic for meal prep; simply portion the cooked salmon and vegetables into containers for healthy lunches.
