1 large head of broccoli, cut into florets
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup honey
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon minced fresh garlic
1 teaspoon grated fresh ginger
1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for the easiest cleanup.
In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, salt, and pepper. Spread the chicken in a single layer on one half of the prepared baking sheet.
Toss the broccoli florets with the remaining 1 tablespoon of olive oil and a pinch of salt. Spread the broccoli on the other half of the baking sheet.
Bake for 15 minutes.
While the chicken and broccoli bake, prepare the sauce. In a small saucepan, whisk together the honey, soy sauce, rice vinegar, minced garlic, and ginger. Bring the mixture to a simmer over medium heat.
Stir the cornstarch slurry into the simmering sauce and cook for about 1 minute, stirring constantly, until the sauce thickens slightly. Remove from heat.
After 15 minutes of baking, remove the pan from the oven. Drizzle half of the honey garlic sauce over the chicken and toss gently to coat. Drizzle the remaining sauce over the broccoli.
Return the pan to the oven and bake for another 8 to 10 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the broccoli is tender-crisp.
Remove from the oven. Garnish with sesame seeds and green onions if desired. Serve this quick chicken broccoli dinner immediately over rice or noodles.
Notes
For a low-effort chicken dinner, you can use pre-cut broccoli florets from the grocery store.
If you prefer a Chinese chicken and broccoli takeout style flavor, add 1/2 teaspoon of sesame oil to the sauce mixture.
