Instructions

  1. Place the ricotta cheese, olive oil, lemon juice, salt, and pepper into the bowl of a food processor or a high-powered blender.
  2. Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth, light, and airy. You want a luxurious, creamy texture.
