  • 15 ounces whole milk ricotta cheese, drained if watery
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup toasted walnuts or pistachios, roughly chopped

Instructions

  1. Drain the ricotta cheese for at least 15 minutes if it seems very wet. Place the drained ricotta, 2 tablespoons of olive oil, salt, and pepper into a food processor.
  2. Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth, light, and airy.
  3. Transfer the whipped ricotta dip to a shallow serving bowl. Use the back of a spoon to create a well or swirl pattern on the surface.
  4. In a small bowl, combine the honey and red pepper flakes to create the hot honey drizzle.
  5. Drizzle the hot honey mixture generously over the whipped ricotta.
  6. Sprinkle the toasted nuts over the top. Add an extra light drizzle of olive oil if desired.
  7. Serve immediately with warm crostini, crusty bread, or fresh vegetables for dipping.

  • For the best texture, use high-quality, whole milk ricotta cheese.
  • If you do not have a food processor, you can use a stand mixer with the whisk attachment, but it may take slightly longer to achieve the light, fluffy texture.
