A creamy, comforting vegetarian soup that captures the flavors of pot pie without the crust. Perfect for weeknight dinners.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1/4 cup flour
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 cup frozen peas
  • 1 cup diced potatoes
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic, thyme, and rosemary. Cook for 1 minute.
  4. Sprinkle flour over vegetables and stir to coat.
  5. Slowly pour in vegetable broth while stirring.
  6. Add milk, peas, and potatoes. Bring to a simmer.
  7. Cook for 15-20 minutes until vegetables are tender.
  8. Season with salt and pepper.

Notes

  • Freeze leftovers for up to 3 months.
