Ingredients

  • 2 cups cooked lentils
  • 1 cup walnuts, finely chopped
  • 1 cup mushrooms, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion, garlic, and mushrooms until soft.
  3. Mix lentils, walnuts, breadcrumbs, soy sauce, tomato paste, and spices in a bowl.
  4. Add sautéed vegetables and combine well.
  5. Press mixture into a loaf pan and bake for 45 minutes.
  6. Let cool slightly before slicing.

  • Make ahead and reheat before serving.
  • Serve with vegan gravy and roasted vegetables.
