You can master the best vanilla buttercream recipe for smooth, creamy results perfect for piping cakes and cupcakes. This easy homemade frosting recipe delivers bakery style perfection every time.

Ingredients

Scale
  • 1 cup unsalted butter, softened to room temperature
  • 4 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1/4 cup heavy cream or milk (use more for a softer consistency)
  • 1/4 teaspoon salt

Instructions

  1. Place the softened butter into the bowl of a stand mixer fitted with the paddle attachment. Beat the butter on medium speed until it is light and fluffy, about 3 minutes.
  2. Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until fully incorporated after each addition. Scrape down the sides of the bowl as needed.
  3. Add the vanilla extract and salt. Mix on medium speed for 1 minute.
  4. Slowly pour in the heavy cream or milk while the mixer runs on low speed.
  5. Increase the mixer speed to medium-high and beat for 3 to 5 minutes until the frosting is incredibly light, fluffy, and smooth. This step is key for achieving that creamy buttercream for piping.
  6. If the frosting seems too stiff, add more cream, one teaspoon at a time. If it is too soft, add a little more sifted powdered sugar.
  7. Use immediately to frost your favorite desserts or store covered at room temperature for up to 2 days.

Notes

  • For the smoothest vanilla icing, make sure your butter is truly at room temperature—soft but not melted.
  • Sifting the powdered sugar prevents graininess in your no-fail buttercream.
  • To achieve a stiff frosting for decorating, use slightly less liquid or chill the finished frosting for 15 minutes before piping.
  • If you want a richer vanilla flavor, use vanilla bean paste instead of extract.
