- 10 lbs ripe tomatoes, peeled and chopped
- 2 cups white vinegar
- 1 cup chopped onion
- 4 jalapeños, seeded and minced
- 4 cloves garlic, minced
- 1/4 cup chopped cilantro
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- Sterilize jars and lids in boiling water for 10 minutes.
- Combine tomatoes, vinegar, onion, jalapeños, garlic, cilantro, salt, pepper, and cumin in a large pot.
- Simmer for 20 minutes, stirring occasionally.
- Ladle hot salsa into jars, leaving 1/2 inch headspace.
- Wipe jar rims, apply lids, and tighten bands.
- Process jars in a water bath for 15 minutes.
- Remove jars and let cool for 24 hours before storing.
Notes
- Adjust jalapeños for desired spice level.
- Use a canning funnel for easy filling.
- Label jars with date and contents.
