Ingredients
Scale
1 cup unsalted butter
2 cups granulated sugar
1/4 cup water
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1 cup slivered almonds, toasted
Pinch of salt (optional)
Instructions
Line a 15×10 inch baking sheet with parchment paper or a silicone mat. Spread the toasted almonds evenly over the paper.
In a heavy-bottomed saucepan, combine the butter, sugar, and water. Stir constantly over medium heat until the butter melts and the sugar dissolves.
Stop stirring once the mixture boils. Insert a candy thermometer if you have one, aiming for 300 degrees Fahrenheit (hard crack stage). If you do not have a thermometer, boil for 12 to 15 minutes, watching carefully.
Remove the saucepan from the heat immediately when it reaches the correct stage or time. Stir in the vanilla extract quickly.
Pour the hot toffee mixture over the almonds on the prepared baking sheet. Spread it thinly and evenly using a heat-safe spatula.
Immediately sprinkle the chocolate chips over the hot toffee. Let it sit for 5 minutes to melt slightly.
Spread the melted chocolate evenly over the toffee layer. Sprinkle with a pinch of salt, if using.
Refrigerate the toffee for at least 1 hour, or until the chocolate is completely firm.
Break the hardened toffee into irregular pieces. Store in an airtight container.
