  • 12 cups Chex cereal (a mix of Rice and Corn works well)
  • 2 cups small pretzel twists
  • 1 cup pecan halves or walnut pieces
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup (2 sticks) unsalted butter
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • Optional: 1 cup chocolate chips for drizzling

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal, pretzels, and nuts. Set aside.
  3. In a medium saucepan, combine the granulated sugar, brown sugar, butter, and corn syrup. Heat over medium heat, stirring constantly until the butter melts and the sugar dissolves. Bring the mixture to a full, rolling boil. Continue boiling for exactly 1 minute without stirring.
  4. Remove the saucepan from the heat immediately. Carefully stir in the vanilla extract, baking soda, salt, and baking powder. The mixture will foam up significantly. Work quickly.
  5. Pour the hot toffee mixture evenly over the cereal, pretzel, and nut mixture in the large bowl. Gently fold everything together using a large rubber spatula until all the dry ingredients are lightly coated.
  6. Spread the coated mix in a single layer onto the prepared baking sheets.
  7. Bake for 45 minutes, stirring the mix every 15 minutes to prevent burning and ensure even coating.
  8. Remove from the oven and immediately transfer the mix back to the large, clean bowl (or spread onto fresh parchment paper if you prefer). If you are adding chocolate chips, sprinkle them over the warm mix now and let them sit for 5 minutes to soften slightly. Gently stir until the chocolate is melted and coats some of the pieces, creating a delicious caramel coated cereal effect.
  9. Let the toffee Chex mix cool completely on the baking sheets until the toffee coating hardens and becomes crispy. Break apart any large clumps. Store in an airtight container.
