  • 1 medium onion, diced

  • 4 cups chicken or vegetable broth
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1 pound chicken breast, cut into bite-sized pieces (or use shrimp or tofu for variation)
  • 1 cup sliced mushrooms
  • 1 cup chopped carrots
  • 1 tablespoon fish sauce (optional)
  • 1 teaspoon brown sugar
  • Juice of 1 lime
  • Fresh cilantro and lime wedges, for garnish
  • Cooked rice noodles or rice, for serving

Instructions

  1. Heat the coconut oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, grated ginger, and diced red bell pepper to the pot. Cook for 2 minutes until fragrant.
  3. Stir in the red curry paste and cook for 1 minute, stirring constantly to toast the spices.
  4. Pour in the broth and coconut milk. Bring the mixture to a gentle simmer.
  5. Add the chicken pieces, mushrooms, and carrots. Cook until the chicken is cooked through and the vegetables are tender, about 8-10 minutes.
  6. Stir in the fish sauce (if using), brown sugar, and lime juice. Taste and adjust seasoning as needed.
  7. Serve the soup hot over rice noodles or rice. Garnish generously with fresh cilantro and a wedge of lime.
