Make your next taco night a twist with this easy Taco Pie recipe. Layers of seasoned ground beef, creamy filling, and melted cheese baked inside a crispy tortilla crust make this a comforting, quick family dinner.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 8 large flour tortillas
  • 1 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9-inch pie plate.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain off any excess grease.
  3. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the liquid reduces. Remove from heat.
  4. In a medium bowl, mix together the sour cream, salsa, green onions, and 1 cup of the cheddar cheese. This is your creamy layer.
  5. Line the bottom and sides of the prepared pie plate with 6 of the flour tortillas, overlapping them slightly if necessary to cover the surface.
  6. Spread half of the seasoned ground beef mixture over the tortilla base. Top with half of the sour cream mixture.
  7. Layer the remaining 2 tortillas over the creamy layer. Spread the remaining ground beef mixture on top of these tortillas.
  8. Spread the remaining sour cream mixture evenly over the beef layer.
  9. Sprinkle the remaining 1 cup of cheddar cheese and all of the Monterey Jack cheese over the top.
  10. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the crust edges are lightly golden.
  11. Let the Taco Pie cool for 5 minutes before slicing and serving with your favorite taco toppings.

Notes

  • For an extra crunchy crust, lightly brush the tortillas with melted butter before pressing them into the pie plate.
  • If you prefer a spicier flavor, add a teaspoon of cayenne pepper to your ground beef mixture.
  • This makes a great make-ahead meal; assemble completely, cover, and refrigerate for up to 24 hours before baking.
