1/4 cup packed light brown sugar

Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 1.5-quart casserole dish.
In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, melted butter, egg yolks, milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the sweet potato mixture until just combined. Do not overmix; this keeps the souffle light.
Pour the mixture into the prepared casserole dish.
Prepare the topping: In a small bowl, combine the chopped pecans, flour, and brown sugar. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs. Sprinkle this pecan topping evenly over the sweet potato mixture.
Bake for 30 to 35 minutes, or until the top is golden brown and the center is set.
