  • 2 large sweet potatoes, peeled and cubed (about 1 inch)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups mixed greens (like arugula or spring mix)
  • 1/2 cup crumbled goat cheese
  • 1/2 cup toasted pecans
  • 1/4 cup dried cranberries
  • For the Maple Vinaigrette:
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20 to 25 minutes, turning halfway, until tender and slightly caramelized. Let cool slightly.
  2. While the potatoes roast, prepare the maple vinaigrette. In a small bowl, whisk together the 1/4 cup olive oil, apple cider vinegar, maple syrup, Dijon mustard, and minced garlic until well combined.
  3. In a large bowl, combine the mixed greens, roasted sweet potatoes, dried cranberries, and toasted pecans.
  4. Pour the maple vinaigrette over the salad ingredients. Gently toss everything together until lightly coated.
  5. Sprinkle the crumbled goat cheese over the top of the salad just before serving.

Notes

  • To toast pecans, spread them on a dry skillet over medium heat for 3-5 minutes, stirring often until fragrant. Watch them closely so they do not burn.
  • This salad works well for meal prep salads; store the dressing separately and combine just before eating.
  • Substitute feta cheese for goat cheese if you prefer a different flavor profile in your sweet potato feta salad.
