Easy, elegant appetizer with roasted sweet potatoes, creamy goat cheese, and a cranberry pecan topping. Perfect for parties and holidays.

  • 2 medium sweet potatoes, sliced into 1/2-inch rounds
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz goat cheese, softened
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange on a baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until tender and golden.
  4. Let cool slightly, then spread goat cheese on each round.
  5. Top with cranberries, pecans, and a drizzle of honey.
  6. Sprinkle with fresh thyme before serving.
