Festive bite-sized appetizer with crisp roasted sweet potato rounds, whipped goat cheese, and a cranberry-pecan topping drizzled with honey.

Ingredients

  • 2 medium sweet potatoes, sliced into 1/4-inch rounds
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz goat cheese, softened
  • 2 tbsp honey, plus extra for drizzling
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange on a baking sheet in a single layer.
  3. Roast for 20-25 minutes, flipping halfway, until golden and crisp.
  4. While roasting, whip goat cheese with 2 tbsp honey until smooth.
  5. Mix cranberries and pecans in a small bowl.
  6. Once sweet potato rounds are done, let cool slightly. Spread goat cheese mixture on each round.
  7. Top with cranberry-pecan mix and drizzle with extra honey.

Notes

  • Make ahead: Roast sweet potatoes and prepare toppings a day in advance. Assemble just before serving.
  • For extra crunch, toast pecans before chopping.
