- 8 oz penne pasta
- 1 lb Italian sausage, casings removed
- 2 bell peppers, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/2 cup pasta water
- 1/4 cup heavy cream
- 1/2 cup grated Parmesan
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
- Cook the pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
- Heat olive oil in a skillet over medium heat. Add sausage and cook until browned, breaking it into pieces.
- Add onions and bell peppers. Cook until softened and slightly caramelized.
- Stir in garlic and cook for 1 minute.
- Pour in reserved pasta water and heavy cream. Simmer for 2 minutes.
- Add cooked pasta and Parmesan. Toss until coated.
- Season with salt and pepper. Garnish with fresh basil.
Notes
- Use spicy Italian sausage for extra heat.
- Save pasta water to help emulsify the sauce.
- Try adding a splash of white wine for depth.
