Make this creamy, café-style strawberry milk from scratch using fresh strawberries and a simple homemade syrup. It is a quick refreshment perfect for kids and adults.

  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 cups cold milk (dairy or oat milk for dairy free strawberry milk)
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the sliced strawberries, sugar, and water in a small saucepan.
  2. Heat the mixture over medium heat, stirring occasionally until the sugar dissolves and the strawberries soften, about 5 to 7 minutes. This creates your homemade strawberry syrup.
  3. Remove the saucepan from the heat and let the syrup cool slightly, about 10 minutes.
  4. Mash the strawberries gently with a fork or use an immersion blender for a smoother syrup.
  5. Strain the syrup through a fine-mesh sieve into a bowl, pressing down on the solids to extract all the liquid. Discard the solids or save them for another use.
  6. In a glass, combine 3 to 4 tablespoons of the fresh strawberry syrup with 1 cup of cold milk. Add vanilla extract.
  7. Stir well until fully combined. Taste and add more syrup if you prefer a sweeter flavor.
  8. Serve immediately over ice for a quick refreshment recipe, or chill before serving.

  • For a thicker, creamier beverage, use whole milk or full-fat oat milk.
