Make this simple Strawberry Basil Chicken for a light, flavorful summer meal. This recipe uses a fresh strawberry glaze that pairs perfectly with tender chicken breasts.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh strawberries, hulled and chopped
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced

Instructions

  1. Pat the chicken breasts dry and season both sides with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 7 minutes per side, until cooked through (internal temperature reaches 165°F or 74°C). Remove the chicken from the skillet and set aside.
  3. While the chicken rests, prepare the glaze. In the same skillet, combine the chopped strawberries, chopped basil, balsamic vinegar, honey, and minced garlic.
  4. Cook over medium heat, stirring occasionally, for about 5 minutes, until the strawberries soften slightly and the mixture thickens into a light sauce. You can lightly mash some of the strawberries with a spoon if you prefer a smoother texture.
  5. Return the cooked chicken to the skillet. Spoon the strawberry basil glaze over the chicken pieces.
  6. Cook for 1 more minute to coat the chicken thoroughly. Serve immediately.

  • This dish works well with grilled chicken for an added smoky flavor.
  • For a thicker glaze, simmer for a few extra minutes or add 1/2 teaspoon of cornstarch mixed with 1 tablespoon of water during the last minute of cooking.
