Ingredients
Scale
2 lbs ground beef (80/20 recommended for moisture)
1 box (6 oz) Stove Top Stuffing Mix (Savory or Turkey flavor)
1 cup water
2 large eggs
1/2 cup ketchup or tomato sauce
1/4 cup finely chopped onion
1 tablespoon Worcestershire sauce
1 teaspoon dried parsley
1/2 teaspoon black pepper
For the Glaze: 1/2 cup ketchup, 2 tablespoons brown sugar, 1 teaspoon apple cider vinegar
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×5 inch loaf pan or line a baking sheet with parchment paper for a free-form loaf.
In a large bowl, combine the ground beef, dry Stove Top Stuffing Mix, water, eggs, 1/2 cup ketchup (or tomato sauce), chopped onion, Worcestershire sauce, parsley, and pepper.
Mix all ingredients gently with your hands until just combined. Do not overmix, as this can make the meatloaf tough.
Shape the mixture into a loaf shape on your prepared pan or place it into the loaf pan.
In a small bowl, whisk together the glaze ingredients: 1/2 cup ketchup, brown sugar, and apple cider vinegar. Spread this glaze evenly over the top of the meatloaf.
Bake for 50 to 60 minutes, or until the internal temperature reaches 160 degrees F.
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps keep your meatloaf juicy.
Serve warm. This pairs wonderfully with mashed potatoes for a hearty homestyle meal.
Notes
For an extra savory flavor, use the Turkey flavor Stove Top Stuffing Mix even when using ground beef.
If you prefer individual portions, form the mixture into 8-10 meatloaf cupcakes and bake for about 25 minutes.
To make this a turkey stove top stuffing meatloaf, substitute the ground beef with ground turkey. Adjust cooking time slightly if using leaner meat.
If you want a quick gravy, whisk 1 tablespoon of cornstarch into 1 cup of beef broth and simmer until thickened while the meatloaf rests.
