Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking soda, and salt.
  3. In a separate medium bowl, whisk together the buttermilk, vegetable oil, eggs, lemon zest, lemon juice, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix on low speed until just combined. Do not overmix the batter.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the lemon loaf cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. While the loaf cools, prepare the thick lemon icing: Whisk the powdered sugar and 2 tablespoons of lemon juice together until smooth. Add a few more drops of juice if the icing is too thick.
  9. Once the loaf is completely cool, drizzle the thick lemon icing evenly over the top. Allow the icing to set before slicing and serving your bakery style lemon cake.

Notes

  • For an extra moist lemon loaf cake, ensure your buttermilk is at room temperature before mixing.
  • If you do not have buttermilk, mix 1 cup of milk with 1 tablespoon of white vinegar or lemon juice and let it sit for 5 minutes.
