Make these simple, savory spinach and feta crisps using flaky phyllo dough for a perfect Mediterranean finger food appetizer.

  • 1 tablespoon olive oil
  • 1 cup fresh spinach, finely chopped
  • 4 ounces feta cheese, crumbled
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon nutmeg
  • 8 sheets phyllo dough, thawed
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking sheet.
  2. In a small bowl, combine the chopped spinach, crumbled feta cheese, black pepper, and nutmeg. Mix gently until just combined.
  3. Lay one sheet of phyllo dough flat on a clean surface. Brush the entire surface lightly with melted butter.
  4. Place a second sheet of phyllo dough directly on top of the first. Brush this sheet lightly with butter.
  5. Place about one tablespoon of the spinach and feta mixture along one short edge of the layered phyllo sheets.
  6. Fold the short sides inward slightly over the filling. Then, roll the phyllo tightly from the filling edge to create a thin log or triangle shape.
  7. Place the finished crisp seam-side down on the prepared baking sheet. Repeat this process with the remaining phyllo and filling to make about 8 crisps.
  8. Brush the tops of the assembled crisps lightly with any remaining melted butter.
  9. Bake for 12 to 15 minutes, or until the phyllo is golden brown and flaky.
  10. Remove from the oven and let cool slightly before serving these quick savory bites.

Notes

  • For a lower-carb option, you can substitute the phyllo dough with two layers of fathead dough, cut into small squares before filling.
  • If you like a stronger flavor, add a pinch of dried oregano to the filling mixture.
  • You can prepare these baked feta triangles ahead of time and keep them covered in the refrigerator for up to 24 hours before baking.
