A classic Southern tomato pie with fresh summer tomatoes, creamy cheese-mayonnaise topping, and a flaky crust.

Ingredients

  • 1 9-inch pie crust, pre-baked
  • 4 large tomatoes, sliced
  • 1 tsp salt
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped green onions
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 350°F.
  2. Place tomato slices on paper towels and sprinkle with salt. Let sit for 10 minutes to remove excess moisture.
  3. Pat tomatoes dry with paper towels.
  4. In a bowl, mix mayonnaise, cheddar cheese, mozzarella cheese, basil, green onions, and black pepper.
  5. Layer tomato slices in the pre-baked pie crust.
  6. Spread the cheese mixture evenly over the tomatoes.
  7. Bake for 30 minutes or until the top is golden and bubbly.
  8. Let cool for 10 minutes before slicing.

Notes

  • Use heirloom tomatoes for the best flavor.
  • Serve warm or at room temperature.
