- 1 cup sourdough discard
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix sourdough discard, pumpkin puree, brown sugar, melted butter, eggs, and vanilla.
- In another bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- Combine wet and dry ingredients until just mixed.
- Pour batter into the loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool before slicing.
