1 cup all-purpose flour
1 cup fine or medium grind cornmeal
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sourdough discard (unfed starter)
1 cup buttermilk
1/2 cup honey
2 large eggs
1/2 cup (1 stick) unsalted butter, melted
1/4 cup melted butter for the skillet
Instructions
Preheat your oven to 400°F (200°C). Place the 1/4 cup of butter for the skillet into a 10-inch cast iron skillet and set the skillet in the oven while it preheats.
In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
In a separate medium bowl, whisk together the sourdough discard, buttermilk, honey, and eggs until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
Carefully remove the hot skillet from the oven. Swirl the melted butter around the bottom and up the sides of the skillet.
Pour the cornbread batter immediately into the hot skillet.
Bake for 20 to 25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Let the cornbread cool in the skillet for 5 minutes before slicing and serving warm.
Notes
For a tangier cornbread, you can let the batter sit on the counter for 30 minutes before baking.
This recipe works well with active sourdough starter too, but the tang will be less pronounced.
