- 1 cup granulated sugar
- 1 large egg
- 1 tsp almond extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chopped maraschino cherries, drained
- 1/2 cup white chocolate chips
- 2 tbsp maraschino cherry juice (for color)
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter and sugar until light and fluffy.
- Beat in the egg and almond extract.
- Whisk the flour, baking powder, and salt in a separate bowl.
- Gradually mix the dry ingredients into the wet ingredients.
- Fold in the chopped cherries, white chocolate chips, and cherry juice.
- Chill the dough for 30 minutes to prevent spreading.
- Scoop tablespoon-sized balls of dough onto the baking sheets.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Drain cherries well to avoid excess moisture.
- Chilling the dough helps maintain shape and color.
- For deeper pink color, add a few drops of red food gel.
