- 1 cup canned pumpkin puree
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, mix pumpkin, butter, brown sugar, egg, and vanilla until smooth.
- Add flour, baking soda, salt, cinnamon, nutmeg, and cloves. Stir until combined.
- Drop tablespoon-sized dough onto baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are set.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
