You must try this warm Snickerdoodle Cobbler! It combines the best parts of your favorite cinnamon-sugar cookies into a simple, scoopable dessert. It is gooey, buttery, and perfect served with ice cream.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 1 cup packed light brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup ground cinnamon, divided
  • 1 cup granulated sugar (for topping)
  • 1 (21 ounce) can apple pie filling (optional, for extra gooeyness)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the melted butter, 2 cups granulated sugar, and brown sugar until combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and 2 tablespoons of the ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined into a thick dough. Do not overmix.
  6. If using, spread the apple pie filling evenly over the bottom of the prepared baking dish.
  7. Drop spoonfuls of the dough evenly over the apple filling, leaving small gaps between the dough mounds.
  8. In a small bowl, mix the remaining cinnamon (about 6 teaspoons) with the 1 cup of granulated sugar reserved for the topping. Sprinkle this cinnamon-sugar mixture generously over the dough.
  9. Bake for 35 to 45 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out mostly clean.
  10. Let the cobbler cool slightly before serving warm with a scoop of vanilla ice cream. Find more cozy baking ideas on our Pinterest account.

Notes

  • For a richer, more complex flavor, consider this recipe as an alternative to some structured meal planning when you need a quick, satisfying treat.
  • If you skip the apple pie filling, the cobbler will be slightly less gooey but still delicious.
  • This dessert pairs wonderfully with a high-quality sous-vide precision cooker used for making homemade vanilla bean ice cream.
