Make these beautiful, no-cook smoked salmon cucumber bites for your next gathering. They are a refreshing, keto appetizer that looks high-end but takes minutes to prepare.

  • 1 large English cucumber
  • 4 ounces cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 teaspoon lemon zest
  • 1/4 teaspoon black pepper
  • 4 ounces smoked salmon, thinly sliced
  • Fresh dill sprigs, for garnish

Instructions

  1. Wash and dry the cucumber thoroughly. Slice the cucumber into rounds about 1/4 inch thick. You should get about 20 to 24 slices.
  2. In a small bowl, combine the softened cream cheese, chopped fresh dill, lemon zest, and black pepper. Mix until the ingredients are fully incorporated and the mixture is smooth. This is your herb-infused cream cheese base.
  3. Place the cream cheese mixture into a piping bag fitted with a star tip, or use a small spoon for a rustic dollop.
  4. Pipe or spoon a small amount of the herb cream cheese onto each cucumber slice.
