A simple, fork-tender chuck roast with potatoes and carrots, cooked low and slow for maximum flavor.

Ingredients

  • 3 lbs beef chuck roast
  • 1 lb baby potatoes
  • 3 large carrots, chopped
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned.
  2. Place potatoes, carrots, onion, and garlic in the slow cooker.
  3. Add the seared roast on top.
  4. Pour beef broth and Worcestershire sauce over the roast.
  5. Sprinkle with thyme, rosemary, salt, and pepper.
  6. Cover and cook on low for 8 hours or high for 5 hours, until meat is tender.
  7. Serve with the vegetables and gravy.

Notes

  • For extra flavor, deglaze the skillet with broth and add to the slow cooker.
  • Thicken the gravy with cornstarch if desired.
