A simple one-pot meal with juicy chicken, fluffy rice, and bright lemon herb flavors.

  • 4 boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 1 3/4 cups chicken broth
  • 2 lemons (juiced and zested)
  • 3 cloves garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add rice, chicken broth, lemon juice, garlic, thyme, oregano, salt, and pepper. Stir gently.
  3. Cover and cook on low for 4 hours or high for 2 hours.
  4. Check rice for doneness. If needed, cook an additional 15 minutes.
  5. Stir in lemon zest and parsley before serving.

Notes

  • Use basmati or jasmine rice for best texture.
  • For extra flavor, sear chicken before adding to the slow cooker.
  • Garnish with extra lemon slices if desired.
