Easy Slow Cooker Honey Mustard Chicken

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup Dijon mustard
  • 1/2 cup honey
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch (for thickening)
  • 2 tablespoons cold water (for slurry)

Instructions

  1. Place the chicken breasts or thighs in the bottom of your slow cooker.
  2. In a medium bowl, whisk together the Dijon mustard, honey, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, salt, and pepper until well combined. This makes your easy honey mustard glaze.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover the slow cooker and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours, until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  5. Remove the chicken from the slow cooker and shred it using two forks, or leave it whole if preferred.
  6. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  7. Stir the slurry into the remaining sauce in the slow cooker. Cover and cook on HIGH for 10 to 15 minutes, or until the sauce thickens to your liking.
  8. Return the chicken to the thickened sauce and stir to coat completely.
  9. Serve this sweet and savory chicken dinner immediately over rice or alongside roasted vegetables.

Notes

  • For thicker chicken, use chicken thighs. For a healthier option, use breasts.
  • If the sauce seems too thin after cooking, increase the cornstarch slurry amount slightly and cook longer on HIGH.
