An easy weeknight dinner with sweet-savory honey garlic sauce, tender chicken, and veggies—all in one pot.

Ingredients

  • 4 bone-in chicken thighs
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp ketchup
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup baby carrots

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Mix honey, garlic, soy sauce, ketchup, olive oil, oregano, and black pepper in a bowl.
  3. Pour sauce over chicken.
  4. Add bell pepper, onion, and carrots around the chicken.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Serve with rice or noodles.

  • Use boneless thighs for quicker cooking.
  • For extra stickiness, broil the chicken for 2-3 minutes after cooking.
