A simple one-pot meal with tender chicken, potatoes, carrots, and green beans in a sweet-savory honey-garlic-soy sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 2 cups carrots, sliced
  • 2 cups green beans, trimmed
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Place chicken, potatoes, carrots, and green beans in the slow cooker.
  2. In a bowl, mix honey, soy sauce, garlic, thyme, and black pepper. Pour over the chicken and veggies.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. If desired, mix cornstarch with 1 tbsp water and stir into the sauce to thicken. Serve warm.

Notes

  • For meal planning, double the recipe and freeze leftovers.
  • Use gluten-free soy sauce if needed.
