  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups corn kernels (fresh or frozen)
  • 2 medium potatoes, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for lighter option)
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional toppings: cooked bacon, chopped scallions

Instructions

  1. Place chicken, broth, corn, potatoes, onion, garlic, thyme, salt, and pepper in the slow cooker.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  3. Remove chicken, shred it, and return to the pot.
  4. Stir in heavy cream and cook for an additional 15 minutes.
  5. Serve hot with bacon and scallions if desired.
