  • 2 lbs beef chuck, cut into cubes
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp flour (for thickening)

Instructions

  1. Heat olive oil in a pan and brown the beef cubes on all sides.
  2. Transfer the beef to the slow cooker.
  3. Add onion, carrots, potatoes, and garlic to the slow cooker.
  4. Pour in beef broth and red wine (if using). Stir in tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Before serving, mix flour with a little water to make a slurry and stir into the stew to thicken.

Notes

  • For a richer flavor, sear the beef before adding it to the slow cooker.
  • Freeze leftovers in airtight containers for quick meals later.
