- 2 lbs beef chuck, cut into cubes
- 1 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp flour (for thickening)
- Heat olive oil in a pan and brown the beef cubes on all sides.
- Transfer the beef to the slow cooker.
- Add onion, carrots, potatoes, and garlic to the slow cooker.
- Pour in beef broth and red wine (if using). Stir in tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Before serving, mix flour with a little water to make a slurry and stir into the stew to thicken.
Notes
- For a richer flavor, sear the beef before adding it to the slow cooker.
- Freeze leftovers in airtight containers for quick meals later.
