Make restaurant-quality ahi tuna steak at home in minutes. This recipe delivers a perfect sear and a rare, pink center using a simple, high-protein Asian-inspired marinade.

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

  • 1 tablespoon high-heat cooking oil, like avocado or grapeseed

Instructions

  1. In a shallow dish, whisk together the soy sauce, sesame oil, ginger, and garlic to create the marinade.
  2. Place the tuna steaks in the marinade, turning to coat both sides. Let them marinate for 10 minutes; do not marinate longer or the soy sauce will cure the fish.
  3. Remove the tuna from the marinade and gently pat the steaks dry with paper towels. This step is key for a good sear.
  4. Sprinkle the sesame seeds evenly over all sides of the tuna steaks.
  5. Heat the high-heat cooking oil in a heavy skillet (cast iron works best) over high heat until it shimmers, almost smoking.
  6. Carefully place the tuna steaks in the hot skillet. Sear for 60 to 90 seconds per side for a rare center. Adjust time slightly if you prefer medium-rare.
  7. Remove the seared tuna steaks from the pan immediately. Let them rest on a cutting board for 3 minutes before slicing.
