Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup dry white wine or clam juice
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 pound firm white fish (like cod or halibut), cut into 1-inch pieces
  • 1 pound mussels, scrubbed and debearded
  • 1 pound clams, scrubbed
  • 1 pound large shrimp, peeled and deveined
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Crusty bread, for serving

Instructions

  1. Heat the olive oil in a large Dutch oven or heavy pot over medium heat. Add the onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the white wine or clam juice and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pot.
  4. Stir in the crushed tomatoes, tomato sauce, oregano, basil, and red pepper flakes. Bring the mixture to a simmer.
  5. Season the broth generously with salt and pepper. This is key for a flavorful seafood soup.
  6. Add the fish pieces, mussels, and clams to the simmering broth. Cover the pot and cook for 5 to 7 minutes, until the shellfish begin to open. Discard any shellfish that do not open.
  7. Add the shrimp to the pot. Continue to simmer, uncovered, for another 3 to 5 minutes, until the shrimp are pink and cooked through.
  8. Taste the broth and adjust seasoning if needed.
  9. Ladle the hearty seafood stew into bowls, making sure each serving gets a mix of seafood.
  10. Garnish with fresh parsley and serve immediately with crusty bread for dipping.

Notes

  • For a richer flavor, you can substitute some of the liquid with homemade seafood stock.
  • If you are looking for creamy seafood bisque inspiration, you can stir in 1/2 cup of heavy cream at the very end, before serving.
  • This rustic cioppino recipe is excellent for weeknight seafood soup dinners when you have a little extra time.
