Make this homemade seafood salad that tastes much better than store-bought versions. This quick, creamy recipe featuring imitation crab and shrimp is perfect for sandwiches or a light lunch.

  • 1 pound imitation crab meat, shredded or flaked
  • 1 pound cooked shrimp, peeled and deveined, chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise (use a light version for a healthier option)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh dill, chopped (optional)

Instructions

  1. Prepare the seafood: If using frozen imitation crab, thaw it completely and gently squeeze out any excess water. Shred or flake the imitation crab. Chop the cooked shrimp into bite-sized pieces.
  2. Combine vegetables: In a large bowl, mix the chopped celery and red onion.
  3. Make the dressing: In a separate small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, Old Bay seasoning, and black pepper until smooth.
  4. Mix ingredients: Add the prepared imitation crab, shrimp, and the celery/onion mixture to the bowl with the dressing. Gently fold everything together until the seafood is evenly coated. Do not overmix.
  5. Add herbs: Stir in the fresh dill, if using.
  6. Chill: Cover the bowl and refrigerate the seafood salad for at least 30 minutes before serving. This allows the flavors to blend.
