A fresh, homemade version of classic tomato soup with deep roasted flavors, perfect for a cozy lunch or dinner.

Ingredients

  • 2 lbs ripe tomatoes, halved
  • 1 onion, quartered
  • 4 cloves garlic, peeled
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 cup fresh basil leaves
  • 2 cups vegetable broth
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 400°F.
  2. Toss tomatoes, onion, and garlic with olive oil, salt, black pepper, and red pepper flakes on a baking sheet.
  3. Roast for 30 minutes until tomatoes are soft and slightly charred.
  4. Transfer roasted vegetables to a blender. Add basil and vegetable broth. Blend until smooth.
  5. Pour soup into a pot and stir in heavy cream. Simmer for 10 minutes.
  6. Serve hot with grilled cheese on the side.

  • Use ripe, in-season tomatoes for the best flavor.
