A simple yet elegant fall side dish featuring roasted acorn squash topped with flavorful herb butter.

Ingredients

  • 2 medium acorn squash
  • 3 tbsp unsalted butter, softened
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut acorn squash in half and scoop out seeds.
  3. Brush squash halves with olive oil and place cut-side down on a baking sheet.
  4. Roast for 30-35 minutes until tender.
  5. Mix softened butter with thyme, rosemary, garlic powder, salt, and pepper.
  6. Flip squash halves and spread herb butter inside each.
  7. Return to oven for 5 minutes until butter melts.
  8. Serve warm.
