- 2 medium acorn squash
- 3 tbsp unsalted butter, softened
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Preheat oven to 400°F (200°C).
- Cut acorn squash in half and scoop out seeds.
- Brush squash halves with olive oil and place cut-side down on a baking sheet.
- Roast for 30-35 minutes until tender.
- Mix softened butter with thyme, rosemary, garlic powder, salt, and pepper.
- Flip squash halves and spread herb butter inside each.
- Return to oven for 5 minutes until butter melts.
- Serve warm.
