  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, combine the entire box of red velvet cake mix, vegetable oil, and eggs. Mix with a spoon or electric mixer until a soft dough forms. Do not overmix.
  3. Place the powdered sugar in a shallow dish.
  4. Scoop rounded tablespoons of dough and roll each portion into a smooth ball.
  5. Roll each dough ball thoroughly in the powdered sugar until completely coated.
  6. Place the coated dough balls about 2 inches apart on the prepared baking sheets.
  7. Bake for 8 to 10 minutes. The edges should be set, but the centers will still look slightly soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The crinkle effect develops as they cool.
