1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup dry Ranch seasoning mix
1/4 cup grated Parmesan cheese
4 cloves garlic, minced
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon black pepper
1/2 teaspoon salt (optional, Ranch is often salty)
Wooden or metal skewers (soak wooden ones for 30 minutes)
Instructions
In a medium bowl, combine the Ranch seasoning mix, grated Parmesan cheese, minced garlic, olive oil, lemon juice, black pepper, and salt if using. Mix well to form a thick paste.
Add the cubed chicken to the bowl. Toss until every piece is completely coated with the marinade.
Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to let the flavors penetrate the chicken.
Preheat your grill to medium-high heat (about 400°F). If baking, preheat your oven to 400°F and line a baking sheet with foil.
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
For grilling: Place the skewers on the oiled grates. Grill for 10-14 minutes, turning every 3-4 minutes, until the internal temperature reaches 165°F and the chicken has nice char marks.
For baking: Arrange skewers on the prepared baking sheet. Bake for 18-22 minutes, flipping halfway through, until cooked through.
For air frying: Place skewers in a single layer in the air fryer basket. Cook at 380°F for 10-12 minutes, shaking the basket once halfway through.
Remove from heat and let rest for 5 minutes before serving. These are great served over rice or with a fresh salad.
Notes
To keep your chicken extra juicy, do not overcook it. Use a meat thermometer to check for 165°F internal temperature.
For a low-carb option, serve these flavorful chicken kabobs wrapped in large lettuce cups instead of with bread or rice.
