Make the best apple pie filling from scratch on the stovetop in under 20 minutes. This recipe delivers tender apples in a thick, buttery, spiced sauce, perfect for pies, crisps, or toppings.

  • 6 medium apples (like Granny Smith or Honeycrisp), peeled, cored, and sliced 1/4-inch thick
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/4 cup water
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Combine the sliced apples, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, and allspice in a large, heavy-bottomed saucepan. Toss gently to coat the apples evenly.
  2. Add the water to the saucepan.
  3. Cook over medium heat, stirring frequently, until the mixture begins to bubble and thicken, about 8 to 10 minutes. The cornstarch needs time to activate to create that thick apple pie filling texture you want.
  4. Reduce the heat to low. Stir in the butter, vanilla extract, and lemon juice until the butter melts completely and the sauce is smooth.
  5. Continue to cook for 1 more minute, ensuring the sauce coats the apples well. Do not overcook, or your apples will become too soft.
  6. Remove the pan from the heat. Let the homemade apple pie filling cool slightly before using it in your pie crust or as a topping.

Notes

  • For a sweeter filling, increase the brown sugar to 1 cup. For a tart filling, use only Granny Smith apples.
  • This recipe makes enough filling for one standard 9-inch pie.
  • If you are making this ahead, cool it completely, then store it in an airtight container in the refrigerator for up to 5 days. It freezes well for up to 3 months.
