Make these fast and refreshing cucumber salad sandwiches for a speedy lunch or light snack. This simple creamy filling comes together very quickly.

Ingredients

Scale
  • 2 medium cucumbers, thinly sliced
  • 1/2 cup cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 teaspoon fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 slices sandwich bread (crusts removed for tea sandwiches)

Instructions

  1. Thinly slice the cucumbers. If you want less water content, place the slices on paper towels and gently press them to remove excess moisture.
  2. In a small bowl, combine the softened cream cheese, mayonnaise, chopped dill, salt, and pepper. Mix until smooth. This is your simple creamy cucumber filling.
  3. Gently fold the sliced cucumbers into the cream cheese mixture. Do not overmix; you want the cucumbers to retain some texture.
  4. Spread a generous layer of the cucumber salad mixture onto one slice of bread.
  5. Top with a second slice of bread. Slice the sandwich in half or into quarters for easy eating. Serve immediately for the best texture.

Notes

  • For a faster prep, use pre-sliced English cucumbers.
  • If you are making these ahead, keep the filling separate and assemble the sandwiches just before serving to prevent soggy bread.
  • Try using Greek yogurt instead of mayonnaise for a lighter version of this quick summer sandwich.
