  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup dark rum
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped toasted pecans
  • 1/4 cup melted butter
  • 1 cup powdered sugar
  • 2 tbsp rum (for glaze)

Instructions

  1. Preheat oven to 350°F. Grease a bundt pan.
  2. Whisk flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt in a bowl.
  3. In another bowl, mix pumpkin puree, oil, rum, sugars, eggs, and vanilla.
  4. Combine wet and dry ingredients until smooth.
  5. Fold in toasted pecans.
  6. Pour batter into the pan and bake for 45-50 minutes.
  7. Cool for 10 minutes, then invert onto a rack.
  8. Mix melted butter, powdered sugar, and rum for the glaze. Drizzle over the cake.

Notes

  • For easy release, grease the bundt pan well and dust with flour.
