- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup sugar
- 1/4 cup water
- 4 oz cream cheese, softened
- 1/4 cup sugar
- 1 egg yolk
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
- In a bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In another bowl, mix pumpkin puree, oil, eggs, sugar, and water.
- Combine wet and dry ingredients until just blended.
- In a small bowl, beat cream cheese, sugar, and egg yolk until smooth.
- Pour half the pumpkin batter into the pan. Spoon cream cheese mixture over it. Top with remaining batter.
- Use a knife to swirl the cream cheese into the batter.
- Bake for 60-70 minutes, or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
