A cozy fall breakfast casserole that combines refrigerated cinnamon rolls with pumpkin for a gooey, iced brunch bake perfect for holidays or weekends.

  • 1 can refrigerated cinnamon rolls
  • 1 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 cup melted butter
  • 1/2 cup cream cheese frosting (from the cinnamon roll can)

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Cut cinnamon rolls into quarters and place in a bowl.
  3. Mix pumpkin puree, brown sugar, pumpkin pie spice, and cinnamon in another bowl.
  4. Pour melted butter over the cinnamon roll pieces and toss to coat.
  5. Spread half the pumpkin mixture in the baking dish, add the cinnamon rolls, then top with the remaining pumpkin mixture.
  6. Bake for 25-30 minutes until golden and bubbly.
  7. Drizzle with cream cheese frosting while warm.
